If you stood under the blazing desert sun with no water, you would dry out in just a few hours. Yet a giant cactus can thrive for over a year without a single drop of rain.
How can a plant stay full of cool water in the hottest, driest places on Earth?
The Living Water Tank
Most garden plants have thin stems and flat leaves, but a cactus has a thick, fleshy stem. We call any plant with juicy, water-storing parts a succulent.
The stem is lined with deep ridges like an accordion. When a rare desert rain falls, the stem swells outward to store hundreds of gallons of water, then slowly shrinks as it uses that water during dry months.

Sealing in Moisture: The Waxy Skin
Normal plants lose water vapor into the air through their surface in a process called transpiration.
To prevent this, the outside of a cactus is covered in a thick, shiny layer called a waxy cuticle. It acts just like plastic wrap over a bowl of water, keeping moisture locked inside the plant.
